Do you like sausages? 

We do, but with a “made from actual meat” sausage costing as much as a dollar a piece, the good old sausage is fast becoming an expensive family meal.
I’ve been looking at some of the different ways you can maximise the lovely sausage flavour while making the sausages go further.
These sausage stretchers will save you money and be healthier too.

Chunky sausage bean bake

This easy all in together dinner is savoury and warming. It makes 6 sausages seem like a lot and the flavours will appeal to all ages.

6 good quality sausages
4 floury or all purpose potatoes scrubbed and cut in chunks
1 red capsicum sliced
3 medium carrots peeled and cut in thick batons
1 400g can chilli beans
1 400g can chopped tomatoes

Pre heat the oven to 220°
Brown the sausages in a roasting pan in the oven then remove and pour off excess fat. Set the sausages aside.
While the sausages are browning bring the potatoes to the boil in salted water and boil them for 3 minutes. Drain and return them to the saucepan over the heat to dry off for a minute. Place the potatoes into the sausagey roasting pan, add the carrots and capsicum and return to the oven.
Cook, turning from time to time until the potatoes start to brown. Slice the sausages and toss them back into the pan. When the potatoes and carrots are roasted golden and tender add the tomatoes and chilli beans, mix them in and allow them to heat through.

Serve with green veg or salad.
