These pretty little pastries can be made by an 8 yr old and taste fantastic. Make several batches allowing 2 bandes per person, serve them on their own, dusted with icing sugar or with whipped cream or ice cream if you prefer.
1 sheet of frozen puff pastry
2 medium apples peeled and quartered
2 tbsp apricot jam
Icing sugar to dust
Extra jam to glaze
Cut the pastry into thirds then cut each third in half to make 6 even sized rectangles.
Prick the down the middle of each rectangle 4 or 5 times. Spread a little apricot jam down the middle of each pastry Bande and then slice the apple quarters and place 5 or 6 overlapping slices down the center of the strip.
Bake the pastries on a greased tray until the pastry is puffed up and golden.
Heat a little extra apricot jam and brush the cooked apple centers with the warmed jam.
Dust with icing sugar before serving.
