Super Stretcher Beef Chilli

Serves: 4 Ready in: 25 mins

This is a "super stretcher recipe" making a little bit of meat go a long way. Use on corn chips, in a jacket potato, over rice, in a burrito or spread over tortillas, sandwich them together with grated cheese and cook each side in a frying pan to make quesadillas.


  • 250g beef mince
  • 1 400g can chopped tomatoes
  • 1 400g can chilli beans in sauce
  • 1 tsp beef stock powder
  • 2 dstspn tomato paste

To serve: Cooked rice, tortillas or corn chips, grated cheese, sour cream, salsa...


            In a frying pan cook the mince until browned, stir in the chopped tomatoes, beef stock and tomato paste and bring up to a simmer. 

            Simmer for 4 minutes then Stir in the chilli beans. Simmer 5 minutes then serve.
