Soda Bread

Makes: 1 loaf Ready in: 1 Hour

Costs less than $1.00, requires literally no bread making skills and  no yeast. It's also ready in under an hour and makes a very tasty loaf. Best eaten the day it is made, soda bread is great with soup, dips or a chunk of cheese. It also toasts well and is lovely with marmalade.

Ingredients

  • 1 cup milk
  • 1 tbsp lemon juice or vinegar
  • 2 cups plain flour or 1 cup plain and 1 cup wholemeal
  • ½ tsp salt
  • ½ tsp baking soda – sifted to remove lumps
  • 1 tbsp sugar

      Method

      Preheat the oven to 200°C. Combine the milk and lemon juice or vinegar and set aside for a few minutes to allow curdling to take place.

      In a bowl or processor combine the flour and salt, sift in the baking soda and sugar. Mix or pulse the milk to form a wet dough.

      Turn onto a floured bench and working quickly, knead lightly once or twice then shape into a round loaf.

      Press the loaf to flatten and transfer to a greased baking sheet. Dust the loaf with flour. Cut a deep cross in the top with a serrated knife and bake 35-40 minutes or until well risen, nicely coloured and the loaf sounds hollow when tapped on the bottom.

      Tips

      Have everything ready and the oven preheated as the dough will begin to rise as soon as the milk and baking soda combine.
      If you don’t flatten the loaf it will take longer to cook resulting in a very thick, hard crust.
