Choose the right cut of meat for your budget
As a general rule the cheaper the cut, the longer it will take to cook. Cheap doesn’t mean bad though.
Slow cooking breaks down the connective tissue resulting in tender, melt in the mouth meat and deliciously well developed flavours.
If you are buying in bulk or purchasing a “beast” its important to know how to cook all the cuts you are likely to end up with as only about 30% will be “gourmet” cuts such as steak and fillet.
