35 Minute Crispy Chicken Burgers with Oven Fries and Slaw

Serves: 4-6 Ready in: 35 minutes
Burgers are filling and family pleasing meal. This recipe uses a bag of premade slaw, but you can swap it for lettuce and tomato if you prefer. 

Ingredients

  • 4-6 large potatoes, scrubbed (I allow one per person)
  • a dash of oil
  • a pinch of salt
  • 4 average chicken breasts approx 400-500g
  • ¼ cup plain flour
  • chicken seasoning – see below
  • 2 eggs, lightly beaten
  • 100g Panko breadcrumbs -approx 1 cup
  • 30g parmesan cheese, grated
  • 400g bag of premixed slaw
  • roughly ½ cup aioli
  • a squeeze of lemon juice
  • Burger buns of your choice
  • Tomato sauce optional

 Chicken Seasoning

Combine 1 tsp garlic powder, 1 tsp onion powder, 1 tsp paprika

      Method

      Preheat the oven to 230°C. Scrub the potatoes and cut into 1 cm thick fries. Place on a rimmed baking tray lined with baking paper, drizzle with olive oil, tossing to coat then season with salt. Bake until golden and crispy, turning once or twice during cooking, around 25-35 minutes. 

      When the fries 1/2 way cooked cut the chicken breast horizontally, cover with non-stick-baking paper and bash with a rolling pin to make fillets that are an even thickness. Divide each fillet into burger bun sized pieces, enough for each person.

      In a shallow bowl combine the plain flour and chicken seasoning, along with a pinch of salt and some pepper. In a second shallow bowl whisk the egg, in a third bowl combine the panko breadcrumbs and parmesan cheese. Dip the chicken fillets first in the flour mixture, then the egg, then the crumb mixture. Coating well on both sides.

      In a large frying pan heat enough oil to coat the bottom of the pan. When the oil is shimmering cook the crumbed chicken until golden and cooked through – allow 3-4 minutes each side. Transfer to a tray lined with paper towel and season lightly with salt. You can place in the oven with the fries for a few minutes to keep them warm and crisp if desired.

      While the chicken is cooking place the burger buns on a rack in the oven for a few minutes to warm through. While they are heating prepare the slaw. In a medium bowl combine the slaw mix and aioli, add a squeeze of lemon juice and mix well.

      To serve, slice the burger buns in half and spread with tomato sauce if desired, add some slaw then stack the crispy chicken fillets on top.  Serve with the fries and remaining slaw. 

      Tip

      The crumb coating is also great with fish, you can swap the chicken for fish in the burger or skip the bun altogether and enjoy with the fries and slaw.
