Easy PB & Banana Bliss Balls

Super quick and easy to make and refined sugar free, these bliss balls also make good use of a ripe banana. You do need a food processor to make this recipe but unlike lots of bliss ball recipes it doesn't require lots of expensive nuts or medjool dates, just regular pitted dates and some peanut butter.

Ingredients

  • 1 cup pitted dates
  • ¼ cup crunchy peanut butter
  • 2/3 cup rolled oats
  • 1 ripe banana
  • 1 tbsp cocoa
  • ¼ cup choc chips - optional
  • 1 cup desiccated coconut - divided

    Method

    In a processor combine dates, peanut butter and oats and pulse till chopped.

    Add the banana, cocoa and half of the coconut and pulse till combined, but not completely smooth. Stir in choc bits if using.

    With damp hands roll the mixture into balls, then roll the balls in the remaining ½ cup coconut. Chill till firm if required.

    Tip

    You could use mixture of desiccated and thread coconut for coating or roll in, chopped nuts or dried fruit powder.
